Spinach Raita with Yogurt Seasoning

  • 1 bunch fresh spinach, washed, stemmed and chopped coarsely
  • 2 tablespoons NEERA'S Yogurt Seasoning
  • 2 tablespoons canola oil
  • 2 cups plain yogurt
  • 3/4 teaspoon salt

In a non-stick skillet, warm oil. Add spices, cook briefly until the onion bits are light golden. Add the spinach, increase the heat, until the spinach is wilted and fully cooked, about 6 minutes. Remove skillet from heat and allow to cool. Add yogurt to the skillet, fold and mix until blended. Add the salt. Transfer the raita to a bowl. Cool until served.

Variations and Notes: Increase the spinach to 2 bunches. With the same preparation, you will create a smooth, luscious side dish to accompany grilled salmon.

Serves 4-6.
