Feta, Tomato and Vegetable Chutney Salad

  • 1 medium head of romaine lettuce
  • 4 oz. cubed feta cheese
  • 1 peeled, seeded and cubed cucumber
  • 2 dozen or so kalamata olives
  • 1 teaspoon lemon juice

Clean and chill romaine lettuce. In a small bowl, mix gently, feta cheese, cucumber, kalamata olives, and lemon juice. Slice 3 to 4 large garden tomatoes into thick slices. Arrange three or four tomato slices per person on Romaine leaves. Spoon the mix from the bowl over the tomatoes. Drizzle with any remaining liquid.
